Ripe Tomato Sauce Recipe
Ingredients
| Olive oil | 1 Tablespoon | |
| Garlic | 1 Clove (5gm) | |
| 500 g/1 lb ripe, red tomatoes, peeled, seeded and chopped, or 397 g/14 oz can plum tomatoes | ||
| Pinch of dried thyme | ||
| Bay Leaf | 1 | |
| Tomato Paste | 3 Teaspoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
In a saucepan heat the oil over a low heat and soften the garlic for one minute.
Add the tomatoes, thyme, bay leaf and stir.
Bring to the boil, then simmer, uncovered, over a low heat, stirring occasionally, until the sauce is thick and the tomatoes are very soft.
Remove the bay leaf and either blend the sauce in a food processor or push it through a sieve.
Return to a clean saucepan, stir in the tomato paste and season to taste.
Simmer for a further 10 minutes and serve hot or cold.
