Tomato Sauce Recipe
Tomato Sauce is an all purpose sauce. Tomato Sauce gets its taste from tomatoes flavored with pepper and lemon juice or citric acid. Tomato Sauce is used by many people around the world.
Ingredients
| Chopped tomatoes | 24 Medium, peeled | |
| Onion | 3 Cup (16 tbs), chopped | |
| Celery | 2 Cup (16 tbs), chopped | |
| Green pepper | 1 1/2 Cup (16 tbs), chopped | |
| Salt | 1 Tablespoon | |
| 1/4 cup plus 1 1/2 teaspoons bottled lemon juice or 1 1/2 teaspoons citric acid | ||
Directions
Combine first 5 ingredients in a large kettle.
Bring to a boil; reduce heat, and simmer, uncovered, 30 minutes, stirring frequently.
Remove from heat; put tomato mixture through a sieve, reserving tomato juice.
Bring juice to a boil; reduce heat, and simmer, uncovered, 2 hours, stirring frequently.
Add lemon juice; stir well.
Quickly pour hot mixture into hot jars, leaving 1 inch head space.
Remove air bubbles; wipe jar rims.
Cover at once with metal lids, and screw on bands.
Process in boiling water bath 35 minutes or in pressure canner at 10 pounds pressure (240°) for 15 minutes.
