French Tomato Sauce Recipe
Ingredients
3 slices bacon
1 onion, chopped
2 tablespoons carrots, chopped
1 can (1 lb. 4 oz.) tomatoes
Bay leaf, crumbled
Pinch of thyme
Pinch of marjoram
Pinch of basil
Pinch of summer savory
4 peppercorns, slightly bruised
1/2 clove garlic, crushed
1/4 teaspoon sugar
1 tablespoon flour
1/4 cup consomme
2 ounces sherry
1 tablespoon butter
Directions
Chop bacon and brown slightly; add onion and carrots.
When onion is tender add tomatoes, bay leaf, thyme, marjoram, basil, summer savory, peppercorns, garlic, sugar, flour mixed with consomme and sherry.
Simmer for about 45 minutes.
Strain sauce into another saucepan, rubbing vegetables through sieve.
Heat and add butter.
