Tomato Ricotta And Spinach Sauce Recipe
Ingredients
2 tsp (10 ml) butter
1 garlic clove, finely sliced
1 French (dry) shallot, chopped
1/2 cup (125 ml) tomatoes, diced
1/2 cup (125 ml) spinach, cut into strips
1/2 cup (125 ml) ricotta cheese
Salt and pepper
2 tbsp (30 ml) grated
Parmesan cheese
Directions
– In a skillet, melt butter and cook garlic, shallot and tomatoes until soft but not browned. Add shredded spinach and ricotta. Season with salt and pepper. Heat for a few minutes. Pour mixture over pasta. Sprinkle with Parmesan and serve.
