Tomato Rice Recipe
Tomato Rice has a fine taste. Tomato Rice gets its taste from tomato mixed with rice and flavored with spices. Tomato Rice is inspired by many food joints worldwide.
Ingredients
225g long groin rice
3 tblspn oil
1 onion, sliced
1 garlic clove, crushed
2.5cm piece root ginger, peeled and chopped
539g tomatoes
Salt
2 tblspn finely chopped coriander
Directions
Wash the rice under cold running water, then soak in fresh cold water for 30 minutes; drain thoroughly.
Heat the oil in a large pan, add the onion and fry until golden.
Add the garlic and ginger and fry for 2 minutes.
Add the rice, stir well and fry for 2 minutes.
Break up the tomatoes in their juice and add to the rice with salt to taste.
Bring to the boil, then cover and simmer for 15-20 minutes until tender.
Transfer to a warmed serving dish and sprinkle with the coriander.
