Ingredients

 Sweet red pepper1 1/2 Cup (16 tbs), chopped
 Tomato - 1 medium, peeled, seeded, and chopped
 Onion3/4 Cup (16 tbs), finely chopped
 Garlic1 Clove (5gm), finely chopped
 Red wine vinegar1 Tablespoon
 Olive oil1 1/2 Teaspoon
 Salt1/4 Teaspoon
 Dried oregano1/4 Teaspoon
 Dried sage1/4 Teaspoon
 Dried marjoram1/4 Teaspoon

Directions

MAKING
1) In a medium-size Dutch oven, add all ingredients to combine.
2) Place over high heat and bring to a boil.
3) Cover the container and simmer for 20 minutes by reducing the heat.
4) Remove from heat and allow the ingredients to cool slightly.
5) In a container of electric blender or food processor, place the warm mixture.
6) Process the mixture to a smooth consistency.

SERVING
7) Serve the sauce warm or chilled with chicken, fish, or beef.
