Ingredients

 Hambone1
 Tomato sauce1 Can (10 oz)
 Onion1 Small, chopped very fine
 Canned tomatoes11 Ounce (No 1 Can)
 Stalk celery1 , chopped very fine
 Bay leaf1
 Carrot1 , chopped very fine
 Whole parsley3 Tablespoon
 Butter4 Tablespoon
 Flour1 Tablespoon
 Sugar1 1⁄2 Teaspoon
 Thyme1 Pinch
 Whole allspice6
 Cloves6
 Tabasco sauce1 Dash

Directions

Place a hambone in a small pan with the chopped onion, celery, carrot, and parsley leaves.
Saute with 4 tablespoons butter until the onion is limp and golden, and stir in a bit of flour (about 1 tablespoon); add the tomato sauce and tomatoes.
Drop in the bay leaf, thyme, allspice, cloves, a dash of Tabasco Sauce, and sugar.
Simmer for 30 to 40 minutes.
Strain before serving.
