Tomato Hominy Soup Recipe

Ingredients

 
1 can(1 pound) white or yellow hominy, drained and rinsed
 
1 can (14 ounces) low-sodium tomatoes, drained, with juice reserved
 
1 tablespoon olive oil
 
1 medium-size yellow onion, coarsely chopped (1 cup)
 
1 medium-size sweet red pepper, cored, seeded, and finely chopped (3/4 cup)
 
1 teaspoon chili powder
 
4 cups Chicken Stock or low-sodium chicken broth
 
1 package (10 ounces) frozen corn kernels
 
1/2 teaspoon dried oregano, crumbled
 
1 cup finely diced smoked ham, 95% or more fat free (6 ounces)
 
1 tablespoon lemon juice
 
1/4 teaspoon black pepper

Directions

1 In a food processor or blender, coarsely chop the hominy and tomatoes and set aside. In a stockpot or 5-quart Dutch oven, heat the oil over moderate heat. Add the onion and red pepper and saute, stirring constantly, for 2 to 3 minutes. Stir in the chili powder, stock, corn, oregano, hominy-tomato mixture, and reserved tomato juice and bring to a boil. Adjust the heat so that the mixture simmers gently, cover, and cook for 10 minutes.
2 Stir in the ham, lemon juice, and black pepper and cook, uncovered, 1 minute more or until the ham is heated through.
