Tomato French Onion Soup Recipe
Tomato french onion soup is a cheesy consomme cooked soup. Prepared with chopped onions and stewed tomatoes, laced with sherry, the tomato french onion soup is cooked and finished under the broiler with french bread and cheese topping. Served with a melty and crusted bread topping, it is a real comfort food.
Ingredients
| Onions | 4 Medium, chopped | |
| Butter/Margarine | 2 Tablespoon | |
| Italian | 1 Can (10oz) | |
| Recipe Stewed Tomatoes | ||
| Water | 2 Cup (16 tbs) | |
| Beef | 1 Can (10oz), condensed | |
| Dry sherry | 1/4 Cup (16 tbs) | |
| French bread slice | 4 , toasted | |
| Shredded Swiss cheese | 1 1/2 Cup (16 tbs) | |
| Parmesan cheese | 1/4 Cup (16 tbs), grated | |
Directions
In large saucepan, cook onions in butter about 10 minutes.
Drain tomatoes, reserving liquid.
Chop tomatoes.
Add tomatoes, reserved liquid, water, consomme and sherry to onions.
Bring to a boil, skimming off foam.
Reduce heat and simmer 10 minutes.
Place soup in four broilerproof bowls; top with bread and cheeses.
Broil until cheese is melted and golden.
