Tomato Coulis Recipe

| Carrots | 1⁄4 Cup (4 tbs), finley sliced | |
| Celery | 1⁄4 Cup (4 tbs), finley sliced | |
| Green bell peppers | 1⁄4 Cup (4 tbs), finley sliced | |
| Potatoes | 1⁄4 Cup (4 tbs), diced | |
| Onions | 1⁄4 Cup (4 tbs), finley sliced | |
| Garlic | 1 Clove (5 gm), finley sliced | |
| Canned tomatoes | 28 Ounce | |
| Tarragon | 1⁄4 Teaspoon | |
| Oregano | 1⁄4 Teaspoon | |
| Thyme | 1⁄4 Teaspoon | |
| Parsley | 2 Teaspoon, chopped | |
| Salt and pepper | 1 |
Directions
– In a saucepan, melt butter and saute vegetables and garlic without browning . Add tomatoes and fines herbes, and season with salt and pepper. Bring mixture to a boil, then simmer for 20 minutes.
– Run mixture through blender. Return to saucepan and cook for 5 minutes.
– Adjust seasoning, then pour through sieve and serve.
