Tomato Coulis Recipe

Ingredients
2 tbsp (30 ml) butter
1/4 cup (60 ml) carrots, finely sliced
1/4 cup (60 ml) celery, finely sliced
1/4 cup (60 ml) green bell peppers, finely sliced
1/4 cup (60 ml) potatoes, diced
1/4 cup (60 ml) onions, finely sliced
1 garlic clove, finely sliced
28 oz (796 ml) canned tomatoes
1/4 tsp (1 ml) tarragon
1/4 tsp (1 ml) oregano
1/4 tsp (1 ml) thyme
2 tsp (10 ml) chopped parsley
Salt and pepper
Directions
– In a saucepan, melt butter and saute vegetables and garlic without browning . Add tomatoes and fines herbes, and season with salt and pepper. Bring mixture to a boil, then simmer for 20 minutes.
– Run mixture through blender. Return to saucepan and cook for 5 minutes.
– Adjust seasoning, then pour through sieve and serve.
