 Butter2 Tablespoon
 Carrots1⁄4 Cup (4 tbs), finley sliced
 Celery1⁄4 Cup (4 tbs), finley sliced
 Green bell peppers1⁄4 Cup (4 tbs), finley sliced
 Potatoes1⁄4 Cup (4 tbs), diced
 Onions1⁄4 Cup (4 tbs), finley sliced
 Garlic1 Clove (5 gm), finley sliced
 Canned tomatoes28 Ounce
 Tarragon1⁄4 Teaspoon
 Oregano1⁄4 Teaspoon
 Thyme1⁄4 Teaspoon
 Parsley2 Teaspoon, chopped
 Salt and pepper1

Directions

–  In a saucepan, melt butter and saute vegetables and garlic without browning . Add tomatoes and fines herbes, and season with salt and pepper. Bring mixture to a boil, then simmer for 20 minutes.
–  Run mixture through blender. Return to saucepan and cook for 5 minutes.
–  Adjust seasoning, then pour through sieve and serve.
