Tomato Chive And Basil Sauce Recipe
Ingredients
2 tsp (10 ml) butter
1 French (dry) shallot, finely sliced
1 garlic clove, finely sliced
1/2 cup (125 ml) tomatoes, diced
1/2 tsp (2 ml) chopped chives
1/2 tsp (2 ml) chopped basil
1 1/2 cups (375 ml) vegetable juice
Salt and pepper
Cappelletti, cooked
Directions
– In a skillet, melt butter and cook shallot and garlic until soft but not browned. Add tomatoes, chives and basil. Pour vegetable juice over mixture. Season with salt and pepper. Add cappelletti, stir, and heat.
