 Skim milk1⁄4 Cup (4 tbs), heated
 Shredded sharp cheddar cheese3 Ounce, shredded
 Sharp cheddar cheese3 Ounce, shredded
 Powdered mustard1⁄4 Teaspoon
 Dry white wine2 Tablespoon
 Ground red pepper1 Dash
 Egg1 , lightly beaten
 French bread piece2 Ounce, cut in half horizontally (Enriched)
 Tomato1 Medium, cut into 4 slices

Directions

MAKING
1. In a small saucepan, place the margarine
2. Heat the margarine till bubble and add the onion to the hot margarine
3. Sauté till transparent.
4. Add the flour to the pan and cook while stirring constantly for two minutes
5. Remove from heat and use a wire whisk to add the hot milk to the pan.
6. Return to the heat and cook gently till it is thick
7. Add cheese and mustard and cook again while stirring or till the cheese is melted.
8. Add wine and pepper to the pan and stir again to combine
9. Remove from heat and add the egg while beating gently

FINALIZING
10. Spread 1/3 of the cheese sauce on each piece of bread.
11. Place 2 tomato slices on top of each slice of bread
12. Transfer the bread slices to a broiler pan and broil till the cheese is melted and brown. This will take three minutes

SERVING
13. Serve hot immediately
