Tomato Broccoli Chicken Recipe
Ingredients
| 2 whole medium chicken breasts, skinned, boned, and halved lengthwise | ||
| Onion | 1/4 Cup (16 tbs), chopped | |
| Butter/Margarine | 2 Tablespoon | |
| 1 10-ounce package frozen cut broccoli, thawed | ||
| Lemon juice | 1 Teaspoon | |
| Salt | 3/4 Teaspoon | |
| Dried thyme | 1/4 Teaspoon, crushed | |
| Tomatoes | 3 Medium, cut into wedges | |
Directions
Sprinkle chicken lightly with a little salt and pepper.
Cut chicken into 1/2-inch-wide strips.
In medium skillet cook chicken and onion in butter or margarine till chicken no longer is pink.
Stir in broccoli, lemon juice, salt, thyme, and 1/8 teaspoon pepper.
Cover; simmer 6 minutes.
Add tomatoes.
Simmer, covered, 3 to 4 minutes more
Cut chicken into 1/2-inch-wide strips.
