Tomato Aspic With Blue Cheese Dressing Recipe
Tomato aspic with blue cheese dressing is a flavorful and cheesy aspic. Made with plain gelatin and added veggies, the tomato blue cheese aspic has cream cheese in it and is garnished with twists of lemon.

Ingredients
3 envelopes unflavored gelatin
1 (46 ounce) can tomato juice, divided
2 tablespoons grated onion
1/2 teaspoon salt
1 cup chopped green pepper
1 cup chopped celery
Lettuce leaves
1 (3 ounce) package cream cheese, softened
1/4 cup milk
1 (4 ounce) package blue cheese, crumbled
Twist of lemon
Directions
Sprinkle gelatin over 1 1/2 cups tomato juice; let stand 1 minute.
Cook mixture over medium heat until gelatin dissolves.
Stir in onion, salt, and remaining tomato juice.
Chill until the consistency of unbeaten egg white.
Fold in green pepper and celery; spoon into a lightly oiled 6 cup ring mold.
Cover and chill until firm.
Unmold onto a lettuce lined plate; arrange a lettuce cup in center.
Combine cream cheese and milk; beat at medium speed of an electric mixer until blended.
Add blue cheese, and beat until blended.
Spoon dressing into center of mold, and garnish with a twist of lemon.
