Ingredients
1/2 cup water
1 24-ounce can tomato juice
2 lemon slices
Hot-pepper sauce
2 envelopes unflavored gelatin
1 tablespoon cider vinegar
1 teaspoon salt
1 teaspoon sugar
Lettuce leaves
Directions
1. In 2-quart saucepan, combine water, 1/2 cup tomato juice, lemon slices, and hot-pepper sauce to taste. Sprinkle gelatin evenly over mixture; let stand 1 minute to soften gelatin slightly. Cook over medium heat, stirring frequently, until gelatin completely dissolves. Discard lemon. Stir in vinegar, salt, sugar, and remaining tomato juice. Pour mixture into eight 1/2-cup molds or one 6-cup ring mold. Refrigerate until set.
