Tomato and Zucchini Salad Recipe
Ingredients
| Coarsely chopped | 1 Cup (16 tbs) | |
| Zucchini | 1 Cup (16 tbs), thinly sliced | |
| Onion | 2 Tablespoon, sliced | |
| 2 tablespoons bottled low-carb Italian salad dressing | ||
| 1 teaspoon snipped fresh basil or 1/4 teaspoon dried basil, crushed | ||
| Lettuce leaves | 4 | |
| 2 tablespoons crumbled feta cheese or shredded mozzarella cheese | ||
Directions
1. In a medium bowl combine tomato, zucchini, green onion, dressing, and basil. Toss lightly to coat.
2. Line 4 salad plates with lettuce. Divide tomato mixture evenly among plates. Sprinkle each serving evenly with cheese.
