Tomato and onion Strata Recipe
Ingredients
| Vegetable oil cooking spray | ||
| Day-old oatmeal bread - 8 slices, cut into ½ -inch cubes | ||
| Large ripe tomato - 1, sliced | ||
| Canola oil | 1 Teaspoon | |
| Small onion | 1 | |
| Milk fat | 1 | |
| Egg whites | 4 | |
| Whole eggs | 2 | |
| Baking powder | 1/2 Teaspoon | |
| Dried dill weed - 1 teaspoon | ||
| Pepper | 1/4 Teaspoon | |
| Parmesan cheese | 2 Tablespoon, grated | |
Directions
GETTING READY
1. In a 8x8x2-inch baking dish, spray oil and put 3/4th of the bread cubes and top it up with sliced tomatoes.
MAKING
2. In a non stick skillet, heat oil, add onions and sauté, remove from skillet onto the baking dish with tomatoes and again top with the remaining bread cubes.
3. In a medium bowl, whisk together milk, egg whites, eggs, baking powder, dill, pepper and pour this mixture into the baking dish.
FINALISING
4. Sprinkle the baking dish contents with cheese, and bake for 40 to 50 minutes at 225 degrees centigrade, until puffed up and golden.
SERVING
5. Allow to stand 5 minutes before cutting, serve hot
