Ingredients

 Red onion1 , diced
 Tomatoes2 , diced
 Carrot1 Large, diced
 Cucumber1/2 Medium, diced
 1 green chilli, deseeded and sliced
 Coriander1 Tablespoon, chopped
 1 tablespoon chopped fresh mint, plus some sprigs to garnish (optional)
 Salt To Taste
 Lime juice2 Tablespoon

Directions

1. Put the diced onion, tomatoes, carrot and cucumber in a salad bowl. Add the chilli and herbs with salt to taste.
2. Using a fork, gently mix everything together.
3. Sprinkle over the lime juice and, if you wish, garnish with sprigs of mint .
