Tomato and Mint Salad Recipe
Ingredients
| 4 medium, firm tomatoes, chilled | ||
| Sugar | 2 Teaspoon | |
| Lemon juice | 3 Tablespoon | |
| 6 tablespoons olive or salad oil | ||
| Mint | 1 Tablespoon, chopped | |
| Fresh mint leaves for garnish | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Slice the tomatoes and place in a salad bowl, sprinkle with sugar, salt and pepper.
Combine lemon juice, oil, salt, pepper and chopped mint in a jar, cover and shake vigorously, then pour over the tomatoes.
Garnish with mint leaves.
A good accompaniment for barbecued sirloin steak or lamb chops.
