 Cucumbers2
 Tomatoes2 Kilogram
 Lancashire cheese250 Gram, grated
 4 tablespoons chopped chives or parsley
 Olive oil150 Milliliter (Dressing:)
 White wine vinegar4 Tablespoon (Dressing:)
 Caster sugar1 Teaspoon (Dressing:)
 Mustard powder1 Teaspoon (Dressing:)
 Garlic2 Clove (5gm), crushed (Dressing:)
 Salt To Taste
 Pepper To Taste

Directions

Thinly slice the cucumbers and tomatoes into a large salad bowl.
Sprinkle with the cheese and herbs.
Put all the dressing ingredients, with salt and pepper to taste, in a screw-top jar and shake well.
Pour over the salad just before serving, tossing lightly.
