Tofu Stuffed Fish Recipe

Ingredients

 
Stuffing
 
2 tbsp butter or margarine
 
2 garlic cloves, chopped
 
12 fresh mushrooms, chopped
 
1 onion, finely chopped
 
6 oz tofu, crumbled
 
1/4 cup parsley, chopped
 
1/4 cup bread crumbs
 
1/2 tsp salt and pepper
 
8 white fish fillets
 
10 oz canned cream of celery soup

Directions

In a skillet, melt butter.
Fry garlic, mushrooms and onion.
Add tofu and parsley.
Cook 2-3 minutes.
Fold in bread crumbs, salt and pepper.
Cover each fillet with around 2 tbsp (30 mL) stuffing.
Roll fillets.
Secure with toothpicks.
Place fish in a skillet.
Pour in cream of celery.
Simmer 10 minutes or until fillets are cooked.
If extra stuffing remains, fold into sauce during cooking.
