Tofu Shepherd's Pie Recipe
Ingredients
1/4 tsp (1 ml) vegetable oil
1 small onion, chopped
2 cups (500 ml) potatoes, mashed and seasoned
1 cup (250 ml) tofu, crumbled
1/2 tsp (2 ml) garlic powder
1/2 tsp (2 ml) thyme
1 tbsp (15 ml) yeast
2 tbsp (30 ml) soy sauce
1 tbsp (15 ml) sunflower seeds, ground
1 tbsp (15 ml) sesame seeds, ground
14 oz (398 ml) canned creamed com
14 oz (398 ml) canned com niblets
Directions
– Preheat oven to 350 °F (175 °C).
– In a skillet, heat oil and saute onion. Stir onions into seasoned mashed potatoes and set aside.
– In a bowl, combine all other ingredients, except corn niblets.
– Spread a layer of corn niblets in bottom of baking dish, cover with a layer of tofu mixture, followed by a layer of seasoned mashed potatoes. Bake for 30 minutes.
