Tofu Salad Sandwich Recipe
Ingredients
| Tofu | 1 Cup (16 tbs) | |
| Garlic | 1 Clove (5gm), minced | |
| 3 T. raw wheat germ | ||
| Parsley | 1 Tablespoon, chopped | |
| Turmeric | 1/4 Tablespoon | |
| Dry mustard | 1/4 Tablespoon | |
| Celery seed | 1/4 Tablespoon | |
| Oregano | 1/2 Tablespoon, chopped | |
| 1/2 t. chopped sweet basil | ||
| Dill weed | 1/2 Tablespoon, crushed | |
| Mayonnaise | 1 Tablespoon | |
| Green onions | 4 Small, chopped | |
| Celery ribs | 2 , chopped | |
| Paprika | 1/4 Tablespoon | |
| Ground black pepper | 1 Dash | |
| Salt | 1 Dash | |
| Bread slice | 8 | |
| Margarine or butter | ||
| 1 c. alfalfa sprouts, packed down | ||
Directions
Mash tofu thoroughly.
Mix in remaining ingredients in order up to the bread, until spread is well-blended.
Taste and correct seasonings.
May be chilled until serving time.
Butter four slices of toast; spread tofu mixture on unbuttered slices; top with alfalfa sprouts.
Assemble sandwiches.
