Tofu Pineapple Cream Pie Recipe
Ingredients
| 1 12-oz. cake soft tofu | ||
| 2 tsp plain gelatin | ||
| 3 tsp cold unsweetened pineapple juice | ||
| Honey | 1/2 Cup (16 tbs) | |
| 1 tsp grated lemon rind | ||
| 1 tsp vanilla, or 1/2 tsp mint flavoring | ||
| 1 1/2-2 cup well-drained, crushed, unsweetened pineapple | ||
Directions
Add gelatin to pineapple juice.
Let sit 5 minutes, then warm gently to dissolve.
Add 1-2 tablespoons creamy tofu to gelatin and blend thoroughly.
Gradually return mixture to creamy tofu.
Add honey, rind, and flavoring.
Process again, or beat until thoroughly blended.
In a mixing bowl, combine tofu mixture and pineapple.
Mix well.
Pour into a prebaked 9-inch pie crust of your choice.
Chill several hours.
