 Silken tofu package1
 Breadcrumbs7 Tablespoon
 Brazil nuts2 Ounce, finely grated
 Soy sauce1 Tablespoon
 Mung beans4 Ounce, sprouted

Directions

GETTING READY
1) In a large bowl, place the tofu.
2) Using a fork, mash the tofu well.
3) To this, add the breadcrumbs, nuts and soy sauce. Mix well.

MAKING
4) Onto a piece of greased foil, spread about 4 tablespoons of the mixture in a pancake shape.
5) Under a preheated grill, brown the top for about 5 minutes.
6) Gently remove the foil and pancake and let cool.
7) Meanwhile, you can cook 3 more pancakes.
8) Onto serving dishes, invert the pancakes so that the unbrowned side faces upwards.
9) Along the centre of each pancake, arrange 1 ounce of sprouted beans. Fold over by tucking one edge underneath.
10) On high power, reheat for 45 seconds to 1 minute, for each pancake.

SERVING
11) Serve the Tofu Pancakes with Beansprouts immediately after cooking.
