Tofu On Rice Recipe
Ingredients
2 cups vegetable broth
2 tbsp soy sauce
3/4 cup brown rice
1 1/2 cups vegetable broth
1 1/4 cups water
1 cup onion, chopped
1 1/2 cups celery, chopped
1 cup mushrooms, chopped
2 cups tofu, diced
Tarragon, basil, thyme, rosemary, cayenne, to taste
4 tsp cornstarch
1/4 cup water
1 firm tomato, diced
2 green onions, chopped
Directions
In a saucepan, bring to a boil 2 cups (500 mL) vegetable broth and soy sauce.
Add rice.
Reduce heat to minimum.
Continue cooking until rice is done.
In a second saucepan, combine 1 1/2 cups (375 mL) vegetable broth, water, onion, celery, mushrooms and tofu.
Simmer 6 minutes.
Season.
Dilute cornstarch in 1/4 cup (60 mL) water.
Fold into tofu mixture.
Stir until sauce thickens.
Add tomato.
Simmer 4 minutes.
Add rice.
