Ingredients

 
8 ounces firm tofu, cubed
 
1/2 cup plain low-fat yogurt
 
1 tablespoon tarragon vinegar
 
2 teaspoons vegetable or olive oil
 
1 teaspoon prepared mustard
 
1/4 teaspoon salt, ortotaste
 
1/8 teaspoon ground red pepper (cayenne) or black pepper, or to taste
 
2 tablespoons minced fresh tarragon, chives, or parsley

Directions

1 ln a food processor or blender, whirl the tofu, yogurt, vinegar, oil, mustard, salt, and red pepper, scraping down the sides once, for 30 seconds or until smooth.
Transfer the mayonnaise to a container and stir in the tarragon.
Cover and chill for 30 minutes or until thickened.
Will keep, covered and refrigerated, for up to 1 week.
