Ingredients

 
5 tsp (25 ml) vegetable oil
 
1 cup (250 g) tofu, diced
 
2 tbsp (30 ml) soy sauce
 
1/2 cup (125 ml) carrot, grated
 
1/2 cup (125 ml) cauliflower, in flowerets, blanched
 
1/4 cup (60 ml) broccoli, in flowerets, blanched
 
4 cups (1 L) cooked macaroni
 
Salt and pepper

Directions

–  In a skillet, heat 3 tsp (15 ml) of oil, saute diced tofu, and sprinkle generously with soy sauce.
–  In a separate skillet, heat the rest of the oil and saute vegetables for a few minutes. Fold into tofu mixture, add cooked macaroni, heat through and adjust seasoning to taste.
