Tofu Burgers Recipe
Ingredients
1/2 onion, chopped
1/2 green or sweet red pepper, very finely
Chopped
2 tsp (10 ml) vegetable oil
1 lb (450 g) tofu, crumbled
2 eggs, beaten
2 tbsp (30 ml) whole-wheat flour
2 tbsp (30 ml) soy sauce
1/4 cup (60 ml) Parmesan cheese
1 cup (250 ml) breadcrumbs
2 tbsp (30 ml) oil
4 sesame seed hamburger buns
2 tbsp (30 ml) cottage cheese
A selection of vegetables
Directions
– In a bowl, combine all ingredients except breadcrumbs, oil, sesame seed buns, and cottage cheese.
– Shape mixture into 4 patties, dredge with breadcrumbs and set aside.
– In a skillet, heat oil, brown patties on both sides, serve on sesame seed hamburger buns, and garnish with vegetables and cottage cheese.
