 1/2 block silken tofu (about 5 ounces)
 Cider vinegar2 Tablespoon
 2 tablespoons unsweetened apple or orange juice
 Dijon Mustard1/2 Teaspoon
 Garlic1 Clove (5gm), pressed
 Basil2 Tablespoon, chopped
 Salt1/4 Teaspoon

Directions

Place all of the ingredients in a blender or food processor and puree until smooth.
Covered and refrigerated, Tofu-Basil Dressing will keep for about a week.
