Fish (big eye snapper or salmon) – 500 grams, skinned, de-boned and minced
 
Vegetable oil – for frying
 
Sugar – 2 tablespoons
 
Salt – 1 teaspoon
 
Fish sauce – 2 tablespoons
 
Kaffir lime leaves – a bunch
 
Chilli paste – 1 tablespoon
 
Long beans - 200 grams, cut into small pieces
 
Eggs – 2
 
Water – 1 tablespoon
 
Ice cube – 1

Directions

GETTING READY
1. Slice Kaffir lime leaves.

MAKING
2. In a blender, take fish.
3. In a bowl, take a teaspoon of salt in a tablespoon of water.
4. Add a cube of ice and two eggs. Blend it well and transfer the contents into a bowl.
5. Add one tablespoon of chilli paste. Use your hand to knead the mix for two minutes.
6. Add cut beans. Mix it with hand for two minutes.
7. Add two tablespoons of sugar, kaffir lime leaves and fish sauce. Mix it well for about 5 to 6 minutes.
8. Knead for another 10 minutes. It will help your fish cake to be spongy.
9. In a pan, heat oil.
10. Add a big spoon of fish sauce and fry it over a low flame.
11. Once it turns reddish brown, remove fish cake from pan.

SERVING
12. Serve fish cake with sauce.
