Toasted Spinach Rotis Recipe

Toasted spinach rotis are healthy and nutritious indian flatbreads made with whole wheat and spinach stuffing. With added cottage cheese and onions and green chilies for taste, the spinach rotis are toasted to a crispy crust served by cutting in strips.This is a special low sugar recipe great for diabetics as well as for people on low carb diet. Ingredients

 
8 leftover whole wheat chapatis, approx. 200 mm (8") in diameter
 
2 teaspoons oil for greasing
 
For the spinach stuffing
 
3 cups finely chopped palak (spinach)
 
1 cup chopped onions
 
2 green chillies, chopped
 
4 tablespoons crumbled low fat paneer (cottage cheese)
 
2 teaspoons oil
 
salt to taste

Directions

For the spinach stuffing.
Heat oil and fry onions for 1/2 a minute.
Add green chillies and fry again for a few seconds.
Add spinach and cook for 2 minutes.
Drain the water, if any.
Add paneer and salt.
Mix well.
How to proceed place a chapati on a flat surface.
Put a portion of the stuffing on it and fold into a semi-circle.
Grease the outer surface with oil and put in a bread toaster.
Toast till chapati is crisp and brown spots appear on each side.
Cut into strips and serve immediately.
