Toasted Almond Pie Recipe

Ingredients

 
1 tablespoon instant-coffee granules
 
1/4 cup boiling water
 
1/4 cup cold water
 
1/4 cup plus 2 tablespoons sugar
 
1 envelope plus 1 teaspoon unflavored gelatin
 
3 eggs, separated
 
1/4 cup plus 2 tablespoons amaretto
 
1/4 cup Kahlua or other coffee-flavored liqueur
 
1/4 cup plus 2 tablespoons sugar
 
1 cup whipping cream, whipped
 
1 (9-inch) graham cracker crust, chilled
 
Sliced toasted almonds

Directions

Dissolve coffee in boiling water, add 1/4 cup cold water, and set aside.
Combine 1/4 cup plus 2 tablespoons sugar and gelatin in a medium saucepan.
Add coffee mixture, let stand 1 minute.
Cook over low heat until gelatin dissolves.
Beat egg yolks until thick and lemon colored.
Gradually stir about one-fourth of hot mixture into yolks, add to remaining hot mixture, stirring constantly.
Cook, stirring constantly, until mixture thickens.
Remove from heat, and stir in amaretto and Kahlua, set aside.
Beat egg whites (at room temperature) until frothy.
Gradually add remaining sugar, 1 tablespoon at a time, beating until soft peaks form, fold into coffee mixture.
Fold in whipped cream.
Spoon mixture into chilled crust, top with toasted almonds.
Chill until firm.
