Spicy Beef Recipe
Ingredients
| Shallots | 3 | |
| Thyme | 1/2 Teaspoon, chopped | |
| Bay leaves | 4 | |
| Brown sugar | 3 Tablespoon | |
| 1 teaspoon powdered cloves | ||
| 2 teaspoons potassium nitrate | ||
| 1 teaspoon powdered mace | ||
| Peppercorns | 1/2 Teaspoon, crushed | |
| Coarse salt | 1 pound | |
| Molasses | 4 Tablespoon | |
| Allspice | 1 Teaspoon | |
Directions
Chop the shallots and bay leaves very finely.
Mix all the dry ingredients together and add the shallots and bay leaves.
Stand the meat in a large pan and rub the mixture well into it on all sides.
Leave the meat resting on this aromatic bed for 2 days.
Now pour the molasses over it and rub the mixture well into the meat every day for 1 week.
At the end of that time, tie the meat into a neat shape.
Cover well with warm water and simmer gently for 6 hours.
Press between 2 dishes with a weight on top.
This is always eaten cold.
