Tkemali Sauce Recipe
Tkemali sauce is slightly sour & is used on a wide variety of meat, poultry, seafood & even vegetable dishes. The Republic of Georgia has as many recipes for this sauce as they do women in the country!

Ingredients
24 ea Sour prunes pitted*
1 c Cider vinegar
2 tb Fresh lemon juice
2 c Water
1 ea Garlic clove peeled
3 tb Cilantro freshly chopped
1/2 ts Salt
3/4 ts Red pepper flakes
NOTE*
Dried prunes may be used but must be soaked over night in the cider vinegar.
Directions
Bring water to a boil, add prunes, remove from heat & allow to stand
for 10 mins.
Bring back to a boil over high heat & cook for 10 mins. until tender.
Put prunes into a seive over a bowl to drain.
Save all liquid.
Combine prunes, garlic, & cilantro in a blender.
Pour in 1/4 cup of the liquid & blend on high speed.
Add remaining liquid slowly until all is used.
Transfer blended mixture into a sauce pan & add salt & pepper.
Bring to a boil on high.
Reduce heat to simmer & add lemon juice.
Stir & simmer for 3 mins. more.
Pour over fish, poultry, or pork.

I have taken the c as in 2c water to mean cup - is that correct ? It is just that there is a tremendous amount of liquid in this sauce and comparing it with other recipes for the same thing they seem to have much less.
Can you shed light on my darkness ?
