TIRAMISU Recipe

This is one of the best recipe for Tiramisu i have been following.can be served in martini glass or chocolate cups or a small bowl.i normally change it a little bit when i am working it for my Indian clientele by displacing the meringue with whipped cream with a simple reason being egg white giving a scare of bacteria(salmonella).

Recipe Story

Its a classic italian dessert which is one of the highest selling and popular.i normally dont play with classic ,but definitely do some adjustments as per the portion size required.personall want a coffee liqeur for soaking the ladyfinger.

Ingredients

 
mascarpone cheese : 500 gms
 
egg yolk : 5 no.
 
egg white : 5 no.
 
sugar breakfast :175 gms
 
Ladyfingers : 2 pieces
 
strong italian coffee :as per ur tasTE

Directions

1.Cream together mascarpone cheese with the egg yolk.
2.Do thick meringue with egg white and the breakfast sugar.
3.Fold in the meringue in the mascarpone mix.
4.Soak lady finger in the strong coffee.
5.Serve it in a glass with a base of soaked lady fingers and topping with the tiramisu mix.
6.Chill it in a refrigerator and dust with bitter cocoa powder or can also try with coffee powder.
7.Garnish with strips of lady finger or tuilee wafers or even shaved chocolate flakes.

Hey Nisha...the ladyfingers used in Tiramisu are not the vegetable okra/bindi/bendakaya. These lady fingers are a bakery product and used instead of sponge cake (pan de spagna) also ladyfingers are sometimes called sponge fingers, but most bakeries should be able to help you find ladyfingers for making tiramisu. Another thing, if you find it difficult to get mascarpone, then a decent substitution for it is 'cream cheese'. In case you do not get kahlua or Marsala, then a Baileys (coffee liqueur) is also good enough.

This is interesting. Chef Hari also has a Tiramisu recipe at http://www.ifood.tv/node/1272. You mentioned that it is a classic Italian dessert then why have you classified it is an American. Just to make it clear Italian food is probably the most popular food in America. It will be fun to try Indian made Tiramisu by Chef Sharma and USA made Tiramisu by Chef Nayak at the same time.

HI tiramisu is a classic italian dessert.as far as putting itin american category is concerned ....i believe i have to get better aquanted with the system while putting it on net.......my mistake..... classic always remain classic because they never change with the time...the change that can happen in its recipes,portion and style of presentation very well depend on a chefs creativity and style. there is nothing as indian tiramisu but since adding raw maringue is still not considered safe for consumption because of salmonella we try to substitute it with whipped cream.though it can be done using an italian meringue but looking at the prefernce of my guest...i don,t prefer it......no offenece....but i remember one italian chef trying the raw egg meringue in my pastry but finally gave looking at the final taste. if u get pasteurised egg white...thats the best thing also cuisines has nothing to do with the origin of chef.......its all about exposure and training culinary regards niklesh

hey Niklesh..I did have recipe of tiramishu but few things aint available.Can you let me know the substitutes mascarpone cheese italian coffee can any strong coffe be used(is it the powder that is to be used or the decoction?) or is it milk mixed with decoction? what is sugar breakfast ??? is it the normal sugar?

hi nisha mascarpone cannot be substituted.and its available at any of the superstore. coffee can be substitutes with normal coffee.take coffee and little water and give it a boil.that decoction can be thinned with some sugar syrup. it can also be flavoured with kahlua or marsala( both these are coffee liqeurs. breakfast sugar is castor sugar ....more finer then normal grain sugar......available at super store.. thanks
