GETTING READY
1. Fry thinly sliced tindora and keep aside.
MAKING
2. Heat oil add tempering of red chilli , mustard, cumin, channa dal, urad wash, broken cashew and curry leaves and slightly sauté.
3. Add salt, chilli powder, turmeric powder, coconut, and sauté.
4. Add fried tindora and toss

5. Serve hot with chapati or rice.

I usually fry tindora with potatoes and onions.
It tastes amazing.
I fry the onions with a bit of garlic...then put a bit of red chilli powder and turmeric powder. Then I put in the potatoes and tindora. After a while I put some green chilli - fry til the colour changes a bit...and it looks cooked. The last thing I put in is salt.
Cook a little bit more and then it's done.
Best way to eat this is with rice and daal. Right now, I am having it on its own and it still tastes GOOD!

I like this Tindora fry. Another tindora fry from the same region consists of frying tindora and sprinkling adequate besan(gram flour) on it. It soaks up the excess oil too. Tastes good with rice.

I came across this site as i had some tindora and was looking for a way to cook them.
I like the way you did them but today I just needed to make ordinary Gujarati Shaak.
I will try your way of cooking them next time when I serve it with rice.
