Tinda Pickle Recipe

The tinda pickle or ridge gourd pickle is a peppy vegetable pickle. Made with spices like aniseed, fenugreek, chili pepper and turmeric, the tinda pickle is a cooked pickle recipe is set aside to mature before it can be used.

Ingredients

 
Tinda 1 kg
 
Turmeric 2 tsp
 
Mustard seeds 4 tsp
 
Coriander powder 3 tsp
 
Aniseed 3 tsp
 
Fenugreek seeds 2 tsp
 
Mustard oil 2 cups
 
Red chilli pepper 2 tsp
 
Salt 1/2 cup

Directions

1) Cut each tinda into eight pieces.
2) Boil the tinda in salt water until nearly tender and drain the water.
3) Roast and grind the aniseed, fenugreek and mustard seeds all together.
4) Mix the boiled tindas properly with turmeric, red chilli pepper, ground ingredients, salt and oil.
5) Store in a jar and leave for 6 days and shake once daily.
