Tilapia Florentine Recipe
Ingredients
| 4 tilapia or other mild-flavor fish fillets (5 oz each) | ||
| 1 /3 cup reduced-fat mayonnaise or salad dressing | ||
| Lemon juice | 2 Teaspoon | |
| Dijon Mustard | 1 Teaspoon | |
| Tarragon leaves | 1/2 Teaspoon, dried | |
| 1/4 teaspoon lemon-pepper seasoning | ||
| 4 teaspoons garlic-herb dry bread crumbs | ||
| Olive oil | 2 Teaspoon | |
| Mushrooms | 1 1 /2 Cup (16 tbs), sliced | |
| Lemon juice | 1 Tablespoon | |
| Spinach leaves | 6 Cup (16 tbs), lightly packed | |
| Salt | 1 /2 Teaspoon | |
Directions
GETTING READY
1. Preheat the oven to 450°F
2. Spray a 11 x 7-inch pan with cooking spray and set aside till when required
MAKING
3. In another small pan, place the fish fillets
4. In another small bowl, place the mayonnaise, 2 teaspoons lemon juice, the mustard, tarragon and lemon-pepper seasoning until missed completely.
5. Spread the mixture on top of the fish and then sprinkle the fish and mixture with bread crumbs
6. Bake for 10-12 minutes or till the fish is cooked completely
7. In another pan, heat oil over medium heat
8. Cook the mushrooms over medium heat for five minutes till they are softened
9. Add one tablespoon lemon juice and then stir in the spinach gradually
10. Cook for 3 minutes stirring occasionally until the spinach is wilted
11. Sprinkle with salt

12. Top each plate with spinach and place the fish fillet on top.
