Baked tilapia makes a great lunch meal with a bottle of wine


 Celery1⁄4 Cup (4 tbs)
 Onion1⁄4 Cup (4 tbs), chopped
 Sweet red pepper1⁄4 Cup (4 tbs)
 Butter3 Tablespoon
 Flour3 Tablespoon
 Dried tarragon1⁄2 Teaspoon
 Dried basil1⁄2 Teaspoon
 Milk1 1⁄4 Cup (20 tbs)
 Mozzarella cheese1 Cup (16 tbs), shredded
 Tilapia fillets1 1⁄2 Pound
 Salt To Taste
 Pepper To Taste

Clean Tilapia thoroughly,drain it out & keep it aside.
In a saucepan melt butter,saute celery,onions & red pepper till light brown.To this add salt & pepper to taste with tarragon,basil & milk,give it a good mix.Cook it for about a minute,constantly stirring it until thick.To this mixture ass cheese & mix it in well till the cheese melts(don't boil it).Spread the fish in a baking dish & spread the sauce over the fish.Bake the fish for about 10 minutes or till it's done,at 425 degrees.
