Tickled Chinese Cabbage Recipe

Ingredients
1 large head Chinese cabbage
5 teaspoons salt
1 tablespoon sugar
1 tablespoon white vinegar
1/2 small red or green pepper, thinly sliced, for garnish
Directions
1. Trim both ends of cabbage. Cut cabbage crosswise into thirds; cut section with core lengthwise into thin wedges. Wash cabbage and drain well. In large bowl, toss cabbage with salt; cover and refrigerate 3 to 4 hours to absorb salt flavor.
2. Drain liquid from cabbage. Add sugar and vinegar to cabbage; mix well. Cover and refrigerate overnight, tossing cabbage mixture occasionally.
