Thyme flavored Chicken with Mushroom Sauce Recipe
Ingredients
1 broiler-fryer
1 tablespoon vegetable oil
1 tablespoon butter or margarine
1/4 pound mushrooms, trimmed and sliced
2 large tomatoes, peeled, seeded and chopped
1/4 cup sliced green onions
1 small clove of garlic, crushed
3/4 cup water
2 tablespoons lemon juice
1 teaspoon leaf chervil or thyme, crumbled
1 teaspoon salt
1/8 teaspoon pepper
1 tablespoon cornstarch
Directions
1. Cut chicken into serving-size pieces. Brown in oil and butter or margarine in a large skillet with a cover.
2. Add mushrooms, tomatoes, green onions, garlic, 1/2 cup of the water, lemon juice, chervil, salt and pepper; cover. Simmer 45 minutes, or until chicken is tender. Remove chicken to a heated serving platter; keep hot while making gravy.
3. Blend cornstarch with remaining water in a cup; stir into liquid in skillet. Cook, stirring constantly, until mixture thickens and bubbles 3 minutes. Pour over chicken.
