Colorful Thumbprint cookie Recipe Video
Delicious and festive cookies. Perfect for the holidays!
Ingredients
1/2 cup shortening
1/2 cup butter
1/2 cup packed brown sugar
2 egg yolks (save egg whites for later in recipe)
1 teaspoon vanilla
2 cups flour
1/2 teaspoon salt
1 1/2 cups finely chopped pecans
jelly or tinted icing for topping
Directions
Preheat oven to 350 degrees.
Cover cookie sheet with parchment paper.
In a mixing bowl, mix together shortening, butter, brown sugar, egg yolks and vanilla.
Stir in flour and salt.
Continue stirring until dough holds together.
In a separate bowl, beat egg whites slightly.
Roll dough into 1 inch balls.
Dip each cookie ball into egg whites and then roll them in pecans.
Place cookies 1 inch apart on cookie sheet.
Gently press thumb into the center of each cookie.
Bake for 10 minutes or until lightly browned.
Let cool and then fill thumbprints with jelly or tinted icing.

I have always loved your recipes and was sort of waiting for the next big Christmas recipe from you! And bang.. here it is... The best thing is that all the ingredients are right there in my kitchen cupboard and I will surely try making this Christmas Cookie today itself. Will definitely let you know how it turned out!
Also, could you pls load a microwave cookie recipe... I have never got that one right in the attempts I have made! So happy holidays :) and have a great Christmas! :)

They are so rich and delicious. They do take some time to make though as having to roll each cookie gets a bit tiring... but they are really worth it. A microwave cookie recipe?
