1 egg or egg substitute, beaten
2 tsp skim milk
1 1/2 cup flour
2 tsp sugar
3 pkts. concentrated acesulfame-K
2 tsp baking powder
1/2 cup margarine or butter
1 tsp vanilla extract
2 tsp fruit-only raspberry or strawberry jam
Directions
In a large bowl, beat together the egg and milk.
Remove 1 tsp and set it aside to be used later.
Sift together the dry ingredients.
Add the flour mixture, margarine, and vanilla extract to the egg mixture.
Mix until thoroughly blended.
Roll into balls the size of walnuts.
Place the balls on ungreased cookie sheets.
Press a thumbprint into the top of each.
Fill with jam.
Brush the cookies with the egg-and-milk mixture that was set aside previously.
Bake at 350°F (180°C) for 10-15 minutes.
Remove 1 tsp and set it aside to be used later.
