Ingredients
2 1/4 cups whole wheat pastry flour
2 1/4 cups unbleached white flour
1 tablespoon baking powder
1 teaspoon baking soda
8 egg whites, at room temperature
1 cup butter, softened
1 1/2 cups honey
1 teaspoon almond extract
1 1/4 cups milk
Festive Frosting
Directions
Preheat oven to 350°F.
Butter and flour 3 8-inch round layer cake pans.
Sift together whole wheat pastry flour, unbleached white flour, baking powder, and baking soda three times.
In a large bowl, beat egg whites until soft peaks form.
In another large bowl, beat together butter, honey, and almond extract.
Add flour, a little at a time, alternating with milk, and mix well.
Gently fold in egg whites.
Turn into prepared pans, and bake for 20 to 25 minutes, or until a cake tester or food pick inserted into the center comes out clean.
Cool in pans for 10 minutes.
Turn out onto wire racks, and cool thoroughly.
Frost between layers, top, and sides with Festive Frosting.
