Ingredients

 Pasta package1
 2/3 cup olive or vegetable oil
 Red wine vinegar3 Tablespoon
 1/4 cup minced fresh basil or 1 tablespoon dried basil
 Parmesan cheese2 Tablespoon, grated
 Salt1/4 Teaspoon
 Pepper1/4 Teaspoon
 Sweet red pepper1 Small, julienned
 Yellow pepper1 Small, julienned
 Green pepper1 Small, julienned
 1 medium tomato, cut into thin wedges
 Ripe olives1 Can (10oz), drained
 Green onions2 Tablespoon, sliced
 Mozzarella cheese8 Ounce, cubed

Directions

Cook pasta according to package directions.
Meanwhile, in a blender or food processor, process the oil, vinegar, basil, Parmesan cheese, salt and pepper until smooth.
Drain and rinse pasta; place in a large bowl.
Add the peppers, tomato, olives and onions.
Add dressing; toss to coat.
Add mozzarella and toss.
