Three Grain Muffins Recipe

Ingredients
1/3 cup stoneground cornmeal
1/3 cup sugar
1/3 cup soy flour
1 cup whole wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1 large egg, lightly beaten
1 cup plain yogurt
1/3 cup butter, melted
Directions
1. Preheat the oven to 350 degrees.
2. In a bowl, combine the corn-meal, sugar, soy flour, whole wheat flour, salt, and baking soda.
3. Mix the egg and yogurt together lightly and stir into the dry ingredients. Stir in the butter.
4. Fill the muffin tins two-thirds full and bake for 25 minutes, or until done.
