Ingredients

 
1/4 cup thoor dal
 
2 marble sized tamarind
 
2 pinch turmeric
 
1/2 chopped onion
 
1 chopped tomato
 
2 slit green chillies
 
1 cup mixed vegetables like carrot, beans and cabbage, drumstick, radish
 
2 tsp sambaar powder
 
1 pinch asafoetida or hing
 
1 tsp mustard seeds
 
1 tsp urad dal
 
4 nos curry leaves
 
4 tsp chopped corrainder leaves
 
2 tbsp oil
 
1 tbsp ghee

Directions

* Cook thoor dal with little water and turmeric for 4 whistles in pressure cooker till nicely mashed.

* Soak tamarind in 1/2 cup warm water and take out the water.

* In a pan pour 2 tbsp oil add mustard let it splutter and add urud dal and curry leaves, then add green chillies, onion fry a little.

* Put cut tomato and fry for 2 mins, add the cut vegetables and fry for 2 mins.

* Pour the tamarind water and sambaar powder and asafoetida and boil for 3 mins.

* Add this all to the cooked thoor dal and cook for 1 more whistle.

* Open the cooker after steam goes, and garnish with corrainder leaves and 1 tbsp ghee.

* This sambaar can be had with plain rice or any pongal varieties.
