This came together on the fly - I opened up the fridge and started grabbing...

 Sausage5 Pound
 Cubed blanched yukon gold taters2
 Diced sweet onion1⁄4 Cup (4 tbs)
 Eggs4 (Will Be Scrambled)
 Slices of bread2
 Cheese1 Cup (16 tbs)
 Hot sauce1 Tablespoon


Dice the potatoes and blanch them for 5 minutes in salted water and drain. While the taters are blanching chunk the sausage into bite sized pieces and start to cook in a saute pan. Add the onion and taters when they are finished and continue cooking. Move everything to the sides of the pan and add the bread to toast it up. Beat the eggs and add it to the pot and fold until cooked to your liking. Add some cheese (whatever you have) and cook until melted. Top with hot sauce and enjoy...

You guys are cooking fools, but the fat grams are killing me, and maybe you! It's the cheese, sausage fat and white bread. Think healthier, it will taste every bit as good-honest. I use to cook like this lotsa cheese, fatty meats, and white flour.
