Recipe Story

I can't begin to imagine how many steaks I've ruined trying tc cook them on the stove over the years. I finally learned how to use the cooktop and the oven in a way that allows me to reproduce wonderful steak everytime! This is also one of my first videos, so I apologize for the lack of close ups

Ingredients

Steak - 1/5 inch thick cuts of high quality beef such as NY strip, porterhouse, fillet etc

olive oil

1 Tbs coarse sea salt

1-2 Tbs freshly ground black pepper

Directions

Take the meat out of the refrigerator 30 minutes before cooking.
Heat a large cast iron skillet (large enough to hold steaks without crowding) until it is very hot.
Season steaks with salt and pepper on both sides.
Thinly coat skillet with olive oil.
Sear meat on each side for 2-3 minutes. Turn only once. Do NOT press, squish or pierce or
poke at meat.
Transfer pan to a 400 F preheated oven for 7-10 minutes, depending on desired degree of doneness.
Let steak rest for 5 minutes, tented in foil before serving.

I haven't tried your way of cooking yet, but wanted to comment on the video. You did a great job..I raised 4 children and know I would have been pulling my hair out, if I'd been trying to do a video with all the bangings, dog, husband, child interruptions that you had going on. The only thing is that it got a little hard to hear you at times. Thank goodness you posted it as well. Keep up the good work, you're very personable...maybe you could video at midnight while they're asleep. LOL You seem to be a more patient mom than I was. Take care!
